Asian Buckwheat Bowl

Asian Buckwheat Bowl:

Steamed Organic Buckwheat with chopped cabbage, thinly grated fresh Carrot ribbons, fresh chopped Cucumber, steamed Edamame, Roasted fresh Red pepper, fresh chopped Scallions, Fresh coriander, Sesame seed, fresh crisp Snow pea, fresh garlic, grated ginger root, mandarin orange, served with house Asian dressing made with Rice wine vinegar, Brown sugar, Red pepper flakes and Lemon juice.

This dish is made with non gmo fresh ingredients that are Gluten Free and Vegan.

Ingredients for Six Servings:

2 cup Buckwheat
2 ½ cups chicken stock, no sodium [optional]
2 ½ cups water [Vegan or Vegetarian]
1 cup cabbage, chopped
1/2 cup carrot, grated
4 oz cucumber, peeled, chopped
1 cup edamame
1/2 cup red pepper, chopped
3 medium scallions, chopped
1/4 cup fresh coriander
1 tbsp sesame seed, toasted, no added salt
1/2 cup snow pea
1/3 cup rice wine vinegar
1 tsp brown sugar
1 pinch red pepper flakes
2 tbsp lemon juice
1/4 tsp garlic
1/2 tsp ginger root
1 whole orange


Cook the Buckwheat:
Get a saucepan on a stove
Pour the desired stock or water [Vegan or Vegetarian]
Combine the Buckwheat to the saucepan
12 to 15 minutes or until the water has been absorbed
Turn off the heat
Fluff the Buckwheat with fork
Cover and let stand for 10 to 20 minutes

Prepare the Ingredients:

Wash and dry the Cabbage
Cut and chop the Cabbage
Set aside

Wash and dry the Carrot
Cut and grate the Carrots
Set aside

Peel the Cucumber if necessary
Cut and dice the Cucumber 
Set aside.


Wash and dry the Edamame
Remove the Shell, peel and blanch edamame
Set aside

Bell Peppers
Wash and dry the Bell Peppers
Thinly slice the Bell Peppers
Set aside

Snow Peas
Wash and dry the Snow Peas
Remove the Shell, blanch snow peas
Set aside

Wash and dry the Scallions
Cut and chop the Scallions
Set aside

Peel the oranges

Assemble the Ingredients:

In a small bowl, whisk together all ingredients for vinaigrette. Mix Vegetables and Buckwheat in a large bowl, Pour vinaigrette over salad and mix well.
